I love a cocktail as much as the next girl, but a Christmas themed cocktail, well now you’ve caught my attention. Any excuse to turn ordinary into something fun and festive right? One of my favourite drinks to sip on whilst celebrating is bubbles: sparkling wine, Champagne, Prosecco and so I’ve taken the humble Mimosa and put my own holiday twist on it. My pomegranate ginger fizz cocktail features seasonal fruit like oranges, limes and of course, pomegranate perils as well as some extra fizz with a bottle of ginger beer. I tested this one out on some of my girlfriends last night and it went down a treat! I promise you’ll be a hit this silly season with this refreshing summery cocktail in hand, perfect for lounging by the pool and catching up with friends and family.
3 parts Champagne or Prosecco
2 parts ginger beer
1 part orange juice
Cut up the oranges and limes into slices, keeping the rind on. De-seed the pomegranate perils into a small bowl and reserve some for later. Take the end of a rolling pin or a flat-ended object and crush some of the perils to produce some juice. Add all the fruit (including the pomegranate perils and juice), mint leaves and orange juice into a pitcher or large serving bowl and stir through. Refrigerate for an hour before adding in your ginger beer and choice of bubbles – I went with a lovely Jacob’s Creek Chardonnay Pinot Noir – give it a good stir through and keep chilled until time to serve. Pour into champagne flutes or tall glasses and serve with the leftover pomegranate perils and a mint leaf or two. Bottoms up!
